As the hum of late summer meets the beginnings of fall breezes, we find ourselves slowly altering our rituals. Sweaters this morning, when only yesterday we fell asleep hot. Of course, the shifting of seasons also applies to our local harvests. We may relish our summer corn and heirloom tomatoes, but beautiful fall squash has already shown its face at market.

This week, we have at once prepared an edible ode to summer and a warm nod to not-so-distant autumn. Tart tomatillos, corn pone, and summer cucumbers are garnished with a hint of apples to come. This time of year, the fusion just makes sense. We love it, especially what it means for our palates.
